Fluffy TigerNut Pancakes (Nut Free) + Organic Gemini Review

For the past few weeks, I have been enjoying a sampling of products from a Brooklyn company named Organic Gemini . They offer a line of TigerNut based products, including a snack bag, horchata, and flour. These products happen to be organic, gluten-gree, non-GMO, Paleo, raw, kosher, vegan, and nut-free. All have one other thing in common, the main ingredient is TigerNuts.

So, what the heck is a TigerNut? 
TigerNuts are not nuts, they are tubers! Besides being deceptive in name, TigerNuts are also a huge source of fiber and valuable nutrients (like iron and vitamin C). They grow in the ground, much like a potato does, and originally come from the Mediterranean and Northern Africa. 

More importantly, how can I eat them?
So many ways and in some fun flavors! Organic Gemini provided me with a sample bag of their Raw TigerNuts, TigerNut Flour, and some of their TigerNut Horchata to try.  

Raw TigerNuts
TigerNuts are crunchy and slightly sweet  As is, they remind me of a ridged almond with the chewiness of a sunflower seed. I toted my TigerNuts in small baggies to snack on at work. They were a perfect pick me up mid morning or afternoon. If you find almonds to be a bit bland, these are more flavorful. Soaking them in water (I left mine overnight) makes them a crunchier, sweeter version of their basic self. You can't go wrong either way, but I recommend soaking a small portion rather than the whole bag until you decide which you like!

TigerNut Horchata
Horchata is traditionally made with rice, but these swap out rice for TigerNuts and are sweetened with dates. They are creamy, but not too thick and the flavor is rich, but not overworked.. You have choices of unsweetened, original, banana, strawberry, chai or coffee. Chai was heaven in my mouth.. I was sad to see the bottom of the bottle. The unsweetened and original are very similar. The unsweetened flavor profile stands boldly on its own and the original offers just a titch of added sweetness. Have you ever visited Starbucks, or the like and ordered a "Mocha Chiller Whosie-Whatsie?" That's the deliciousness that you're getting with the Coffee Flavor! The fruit flavors will remind you of their respective smoothies. For me, if I have more than 1-2 sips, they are a bit intense (but my guy loves them!) 

TigerNut Flour
Like almond flour is made of almonds, this flour is made of ground TigerNuts. Since TigerNuts have a sweeter flavor, it makes a nice base for Paleo baked goods. TigerNut flour has a delightfully subtle "gritty" texture, which makes it unique from other non-wheat flours.

Fluffy TigerNut Pancakes

  • 4 lg eggs, whisked
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla
  • 3/4 cup tigernut flour
  • 1/4 cup coconut flour
  • 1/4 cup coconut sugar
  • 1/2 tsp baking powder
  • dash of salt


How to cook Fluffy TigerNut Pancakes

  1. Mix all wet ingredients together in medium sized bowl.
  2. In separate small bowl, add in all dry ingredients. Stir until combined well.
  3. Gradually whisk dry ingredients into egg mixture, until well combined and lump free. Set aside.
  4. Melt a small amount of fat (coconut oil/butter/ghee) in a frying pan on low heat.
  5. Drop 3-4 tbs of batter into the center of your pan to form a cake.
  6. Wait a minute or two until bubbles begin to form and then flip to the other side.
  7. Let it cook for another 15-30 secs before removing from the pan.
  8. Repeat with remainder of batter, adding additional fat to the pan as needed.
  9. Serve with a drizzle (or rain shower) of pure maple syrup for extra goodness!
