Dairy Free Taco Casserole

This dairy free taco casserole is a fun an easy to make dish. I like to make it on Sundays and break it out a couple days later when the work week has wreaked havoc on my schedule. The texture and flavor are just as good whether you eat fresh out the oven or when it’s reheated, so its ideal for a night with little time or patience to make dinner. I do recommend reheating it at a low temperature in the oven, rather than the microwave, but really either would work!

ingredients:

  • 1 lb ground beef
  • 1 pack taco seasoning
  • 4 cups frozen shredded hashbrowns
  • 1 green pepper
  • 1 red pepper
  • 1/2 red onion
  • 1 jalapeno
  • 1/2 cup coconut milk
  • 8 eggs
  • salt to taste
  • 1/2 tsp chili powder
  • 1/2 tsp garlic 
  • 1/4 tsp paprika

instructions:

How to cook Dairy Free Taco Casserole

  1. Heat oven to 375 degrees.
  2. Cook ground beef in pan on stove and season per instructions on the taco seasoning.
  3. Take hashbrowns out of the fridge to begin thawing.
  4. While beef is cooking, dice the peppers, onion and jalapeno.
  5. Combine with beef once cooked.
  6. In large bowl, whisk eggs, milk and other seasoning. 
  7. Ensure hashbrowns are broken up and then mix into the bowl with the eggs.
  8. Add in beef and veggie mix to the eggs.
  9. Pour into a lightly greased casserole dish.
  10. Bake for 1 hour until a toothpick comes out clean from the center of the dish.
  11. Let rest for 5-10 minutes before serving.
